Today is 10th of month and its time for Muslim food bloggers challenge ..As Eid -ul adha is coming on first week of september rafeeda has decided to select the theme on Meat based recipes… As during this Eid goats are slaughtered after salah we all will have a plenty of meat at home. so preparing meat recipes as challenge would be better idea that will give more recipes for other to try out this Eid.
AS I am vaccation I couldn’t prepare any dish for challenge but I don’t want to miss the challenge so went through my drafts and found a meat recipe which I had prepared in Ramadan..I selected fried kibbeh. I had already posted baked kibbeh in Ramadan..
This is the main appetizer in the middle eastern cuisine… when ever I go to lebanese restuarent I dont forget to have these crunchy starter…. crusty crispy outer coating filled with mixture of cooked ground meat and pine nuts…. I just love the combination of pine nuts and ground meat..

- 250 gm ground meat lamb/beef
- 2 tbsp pine nuts
- 1 medium onion chopped
- 2 tbsp olive oil
- pinch of cardomom ,cinnamon, all spice
- salt to taste
- 250 gm bulgar wheat
- 1/2 tsp all spice
- 1/2 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp cardomom powder
- oil for frying

- In a pan saute the onion in olive oil until soft.
- Stir in the minced meat, breaking it up with a wooden spoon, then, season with salt and spices.
- When the meat has browned all over, and water has been dried turn off the heat and allow to cool and add pine nuts
- Soak the bulgur wheat in cold water for an hour (but no longer)
- Drain the water and place the bulgur into a sieve and leave it to drain for 15 minutes
- Grind the bulgar wheat until it is almost a dough along with the spices
- Get a bowl of water and wet your hands. Take a bit of covering prepared and roll into a firm ball.
- Make a hole in the centre with your finger and prepare an elongated cavity
- Fill in the stuffing and close it make like a preferred shape.repeat with remaining mix.
- Heat oil in a pan and fry the kibbeh till golden brown .
